INGREDIENTS

  • 1–4 whole ducks (thawed if necessary)
  • Olive oil
  • All-Purpose Pit Rub

DIRECTIONS

  1. Light your Pit Barrel® according to the instructions.
  2. Lightly coat all sides of each duck with olive oil, followed by a liberal dusting of All-Purpose Pit Rub. Tip: Season under the wings as well.
  3. Insert one hook into the neck end of the duck and push the pointed end out through the side of one breast. Ensure enough clearance for hanging.
  4. Hang the duck(s) from the rods in the Pit Barrel®, leaving space between each, and secure the lid.
  5. Cook approximately 3 hours, or until the thickest part of the breast reaches 140º internal temperature.
  6. Remove duck(s) and hooks. Lightly tent with foil and rest 15–20 minutes.
  7. Carve into individual pieces and serve.
