WHISKEY PEACH PORK LOIN

INGREDIENTS
- 3–4 lb pork loin
- Pit Barrel® All Purpose Rub
CROWN ROYAL PEACH GLAZE
- 2 oz Simply Peach Juice
- 2 oz Crown Royal Peach Whiskey
- 1/4 cup HowToBBQRight Vinegar Sauce
- 1/4 cup brown sugar
DIRECTIONS
- Light your Pit Barrel® according to lighting instructions.
- Trim excess fat from pork loin. Cut in half if large.
- Inject pork loin with Simply Peach Juice (1–2 inches apart).
- Season all sides with Pit Barrel® All Purpose Rub.
- Let rub adhere for 15–20 minutes.
- Insert hook and hang pork loin inside Pit Barrel® Cooker.
- Combine glaze ingredients in a pan and simmer lightly.
- Remove pork loin at 130°–135° internal temperature.
- Brush glaze over entire pork loin. Save extra for dipping.
- Return to cooker until internal temp reaches 135°–145°.
- Remove, rest 15 minutes, then slice.
- Dip in leftover glaze and enjoy!
