VEGGIE PATTIES
Wanting to enjoy the backyard cookout with your friends, but not so sure about the meat? Try this delicious alternative to the standard American Burger!

INGREDIENTS
- 2 eggs (or flax egg for vegan substitute)
- 3 cups black beans (drained and rinsed)
- 1 cup walnuts (or nut of choice)
- 1 ½ cup cooked brown rice
- 1 ½ cup shredded carrots
- ½ cup red onion
- ½ cup green onions
- 1.5 cups Ritz crackers (or breadcrumbs)
- 2 tbsp smoked paprika
- 1 tbsp chili powder
- 2 tbsp onion salt
- 2 tbsp dried parsley
- Salt and pepper to taste
BEST BURGER DRESSING
- 4 tbsp mayo
DIRECTIONS
- Cook brown rice according to package instructions and let cool.
- Mash black beans into a paste, leaving about ¼ whole.
- Chop walnuts into small pieces and mix with beans.
- Add eggs, shredded carrots, rice, and remaining ingredients. Mix well.
- Freeze 30 minutes or refrigerate 1 hour.
- Mix dressing ingredients and refrigerate.
- Light your Pit Barrel® and heat for grilling.
- Shape mixture into 12 patties.
- Brush patties with oil and cook 5 minutes per side.
- Serve on brioche buns with favorite toppings.
