Wanting to enjoy the backyard cookout with your friends, but not so sure about the meat? Try this delicious alternative to the standard American Burger!

INGREDIENTS

  • 2 eggs (or flax egg for vegan substitute)
  • 3 cups black beans (drained and rinsed)
  • 1 cup walnuts (or nut of choice)
  • 1 ½ cup cooked brown rice
  • 1 ½ cup shredded carrots
  • ½ cup red onion
  • ½ cup green onions
  • 1.5 cups Ritz crackers (or breadcrumbs)
  • 2 tbsp smoked paprika
  • 1 tbsp chili powder
  • 2 tbsp onion salt
  • 2 tbsp dried parsley
  • Salt and pepper to taste

  • 4 tbsp mayo

DIRECTIONS

  1. Cook brown rice according to package instructions and let cool.
  2. Mash black beans into a paste, leaving about ¼ whole.
  3. Chop walnuts into small pieces and mix with beans.
  4. Add eggs, shredded carrots, rice, and remaining ingredients. Mix well.
  5. Freeze 30 minutes or refrigerate 1 hour.
  6. Mix dressing ingredients and refrigerate.
  7. Light your Pit Barrel® and heat for grilling.
  8. Shape mixture into 12 patties.
  9. Brush patties with oil and cook 5 minutes per side.
  10. Serve on brioche buns with favorite toppings.
