Smoked Sausage Pineapple Boats

SMOKED SAUSAGE PINEAPPLE BOAT

INGREDIENTS

  • 1 pineapple, cut in half
  • 1 package of your favorite sausage
  • 1/2 red bell pepper, chopped
  • 1/2 green bell pepper, chopped
  • 2 cloves garlic, chopped
  • 1/2 purple onion, chopped
  • 1 cup rice (or cauliflower rice)
  • Sweet chili sauce
  • Sesame seeds (optional)
  • Cilantro (optional)

DIRECTIONS

  1. Halve pineapple and scoop out the center. Chop removed pineapple.
  2. Light Pit Barrel® according to instructions.
  3. Place sausage in holder and smoke approx. 20 minutes.
  4. Sauté chopped pineapple, peppers, onion and garlic in skillet until browned.
  5. Remove mixture and place in large bowl.
  6. Cook rice (or cauliflower rice). Lightly brown in skillet after cooking.
  7. Remove sausage and slice.
  8. Heat cooking grate and grill pineapple halves until grill marks appear.
  9. Mix sausage, veggies and rice together in bowl.
  10. Spoon mixture into grilled pineapple halves.
  11. Top with sweet chili sauce, sesame seeds and cilantro if desired.
  12. Serve and enjoy!
