Smoked Sausage Pineapple Boats
SMOKED SAUSAGE PINEAPPLE BOAT
INGREDIENTS
- 1 pineapple, cut in half
- 1 package of your favorite sausage
- 1/2 red bell pepper, chopped
- 1/2 green bell pepper, chopped
- 2 cloves garlic, chopped
- 1/2 purple onion, chopped
- 1 cup rice (or cauliflower rice)
- Sweet chili sauce
- Sesame seeds (optional)
- Cilantro (optional)
DIRECTIONS
- Halve pineapple and scoop out the center. Chop removed pineapple.
- Light Pit Barrel® according to instructions.
- Place sausage in holder and smoke approx. 20 minutes.
- Sauté chopped pineapple, peppers, onion and garlic in skillet until browned.
- Remove mixture and place in large bowl.
- Cook rice (or cauliflower rice). Lightly brown in skillet after cooking.
- Remove sausage and slice.
- Heat cooking grate and grill pineapple halves until grill marks appear.
- Mix sausage, veggies and rice together in bowl.
- Spoon mixture into grilled pineapple halves.
- Top with sweet chili sauce, sesame seeds and cilantro if desired.
- Serve and enjoy!
