SMOKED RED WINE PEARS
Bosc pears simmered in a red wine syrup create a decadent and unique gourmet dessert.

INGREDIENTS
- 4–6 medium Bosc pears
- 2 cups sugar
- 2 cups red wine (Merlot, Cabernet Sauvignon, or red blend)
- Vanilla extract
- Whole cloves
- Vanilla ice cream or mascarpone cheese (for serving)
DIRECTIONS
- Combine sugar, red wine, vanilla, and cloves in a saucepan or cast iron skillet.
- Bring to a simmer until sugar dissolves.
- Light Pit Barrel® according to instructions.
- Peel and slice pears.
- Place pears in the wine mixture in an oven-safe dish and cook in the Pit Barrel® for 20 minutes, stirring every 5 minutes.
- Remove pears and set aside.
- Simmer remaining liquid until thickened into a syrup.
- Brush syrup over pears and serve with vanilla ice cream or mascarpone.
