Smoked Corn and Black Bean Salsa
SMOKED CORN AND BLACK BEAN SALSA
INGREDIENTS
- 6 ears of corn (in stalks, soaked 15–20 mins)
- 3 Roma tomatoes, chopped
- 1 purple onion, chopped
- 1 yellow onion, chopped
- 2 cans black beans
- 2 limes, squeezed
- Cilantro
- Salt and pepper to taste
DIRECTIONS
- After soaking corn 15–20 minutes, place in Pit Barrel® using Corn Hanger. Cook 30 minutes, rotating once.
- Remove corn and cut kernels from cob. Mix with olive oil, beans, onions, salt and pepper.
- Add mixture to griddle or pan and cook about 10 minutes. Add tomatoes and warm.
- Finish with fresh lime juice and top with cilantro.
- Serve and enjoy!
