Smoked Corn and Black Bean Salsa

SMOKED CORN AND BLACK BEAN SALSA

INGREDIENTS

  • 6 ears of corn (in stalks, soaked 15–20 mins)
  • 3 Roma tomatoes, chopped
  • 1 purple onion, chopped
  • 1 yellow onion, chopped
  • 2 cans black beans
  • 2 limes, squeezed
  • Cilantro
  • Salt and pepper to taste

DIRECTIONS

  1. After soaking corn 15–20 minutes, place in Pit Barrel® using Corn Hanger. Cook 30 minutes, rotating once.
  2. Remove corn and cut kernels from cob. Mix with olive oil, beans, onions, salt and pepper.
  3. Add mixture to griddle or pan and cook about 10 minutes. Add tomatoes and warm.
  4. Finish with fresh lime juice and top with cilantro.
  5. Serve and enjoy!
