Try out this recipe for a Pit Barrel® spin on the traditional Bologna sandwich!

INGREDIENTS

  • 1 (5 lb) Classic Bologna
  • Pit Barrel Beef and Game Rub
  • Mustard
  • BBQ Sauce
  • Mayonnaise

DIRECTIONS

  1. Score the bologna with a sharp knife in a crosshatch pattern while rolling it on a cutting board.
  2. You may cube it now for burnt ends or smoke whole and cube later.
  3. Coat with mustard and season generously with rub.
  4. Light Pit Barrel® and add wood chunks or chips (Cherry recommended).
  5. Place bologna directly on grate or in pan.
  6. Smoke for 2–3 hours.
  7. Brush with BBQ sauce once outside darkens. Let caramelize for about 15 minutes.
  8. Slice and serve on sandwich with mayonnaise.
