SMOKED BOLOGNA & BURNT ENDS
Try out this recipe for a Pit Barrel® spin on the traditional Bologna sandwich!

INGREDIENTS
- 1 (5 lb) Classic Bologna
- Pit Barrel Beef and Game Rub
- Mustard
- BBQ Sauce
- Mayonnaise
DIRECTIONS
- Score the bologna with a sharp knife in a crosshatch pattern while rolling it on a cutting board.
- You may cube it now for burnt ends or smoke whole and cube later.
- Coat with mustard and season generously with rub.
- Light Pit Barrel® and add wood chunks or chips (Cherry recommended).
- Place bologna directly on grate or in pan.
- Smoke for 2–3 hours.
- Brush with BBQ sauce once outside darkens. Let caramelize for about 15 minutes.
- Slice and serve on sandwich with mayonnaise.
