SKIRT STEAK TACOS

INGREDIENTS
- 2 lbs skirt steak
- Corn tortillas
- 1 chopped onion
- Chopped cilantro
- Salsa
MARINADE
- 1/4 cup lime juice
- 1/4 cup orange juice
- 1/4 cup canola oil
- 1/2 cup water
- 2 tbsp white vinegar
- 2 tbsp Mexican seasoning
- 4 cloves garlic, minced
- 1 chopped jalapeño
DIRECTIONS
- Mix all marinade ingredients. Cover steak and refrigerate at least 2 hours.
- Light Pit Barrel® according to instructions.
- Spray grates with cooking spray.
- Remove steak from marinade and lightly season with kosher salt.
- Place steak on grate and cook to desired doneness, flipping once.
- Remove and let rest a few minutes.
- Slice steak against the grain.
- Warm tortillas and assemble tacos with steak and toppings.
- Enjoy!
