SKIRT STEAK TACOS

SKIRT STEAK TACOS

INGREDIENTS

  • 2 lbs skirt steak
  • Corn tortillas
  • 1 chopped onion
  • Chopped cilantro
  • Salsa

MARINADE

  • 1/4 cup lime juice
  • 1/4 cup orange juice
  • 1/4 cup canola oil
  • 1/2 cup water
  • 2 tbsp white vinegar
  • 2 tbsp Mexican seasoning
  • 4 cloves garlic, minced
  • 1 chopped jalapeño

DIRECTIONS

  1. Mix all marinade ingredients. Cover steak and refrigerate at least 2 hours.
  2. Light Pit Barrel® according to instructions.
  3. Spray grates with cooking spray.
  4. Remove steak from marinade and lightly season with kosher salt.
  5. Place steak on grate and cook to desired doneness, flipping once.
  6. Remove and let rest a few minutes.
  7. Slice steak against the grain.
  8. Warm tortillas and assemble tacos with steak and toppings.
  9. Enjoy!
