SMOKED CHICKEN SALAD

INGREDIENTS
- 1–2 whole chickens
- Lite mayonnaise
- Golden raisins
- Seedless grapes (halved or quartered)
- Golden Delicious apples, chopped
- Toasted pecans
- Celery, chopped
- Green onions, chopped
- Curry powder (1 tbsp per chicken)
- Bread, greens, or crackers for serving
DIRECTIONS
- Cook Pit Barrel® Signature Chicken according to instructions.
- Debone the chicken. Remove or keep skin as desired.
- Combine all ingredients in a mixing bowl, adding curry powder last.
- Add approximately 1 tbsp curry powder per chicken. Adjust to taste.
- Serve on sandwiches, salads, or crackers.
