RIB TACOS

INGREDIENTS
- Pit Barrel® All Purpose Rub
- White corn tortillas
- Sriracha sauce (as needed)
DIRECTIONS
- Prep ribs (St. Louis style or baby back).
- Remove silverskin and pat dry.
- Apply generous coating of Pit Barrel® All Purpose Rub to both sides.
- Hook ribs 2–3 inches from the top.
- Light your Pit Barrel® and bring to temperature.
- Hang ribs from rebar and add wood chunks (Cherry & Apple recommended).
- After about 3 hours, check for pullback and bone movement to confirm doneness.
- Remove ribs and rest 5 minutes. Pull meat from bone (similar to pulled pork).
- Spread sriracha on tortilla and add rib meat.
- Serve and enjoy!
