INGREDIENTS

  • Pit Barrel® All Purpose Rub
  • White corn tortillas
  • Sriracha sauce (as needed)

DIRECTIONS

  1. Prep ribs (St. Louis style or baby back).
  2. Remove silverskin and pat dry.
  3. Apply generous coating of Pit Barrel® All Purpose Rub to both sides.
  4. Hook ribs 2–3 inches from the top.
  5. Light your Pit Barrel® and bring to temperature.
  6. Hang ribs from rebar and add wood chunks (Cherry & Apple recommended).
  7. After about 3 hours, check for pullback and bone movement to confirm doneness.
  8. Remove ribs and rest 5 minutes. Pull meat from bone (similar to pulled pork).
  9. Spread sriracha on tortilla and add rib meat.
  10. Serve and enjoy!
