These delicious scalloped potatoes are loaded with cheese and a kick of heat. They pair perfectly with your favorite cut of meat — especially Garlic Herb Prime Rib!

INGREDIENTS

  • 3 large Russet potatoes, peeled and sliced
  • 2 jalapeños, sliced
  • 1/2 white onion, sliced
  • 1 clove garlic, minced
  • 2 cups milk
  • 3 tbsp butter
  • 3 tbsp flour
  • 2½ cups cheddar cheese
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/4 tsp paprika

DIRECTIONS

  1. Melt butter in a skillet and sauté garlic for 1 minute. Add flour and stir.
  2. Whisk in milk, then add salt, pepper, and paprika.
  3. Bring to a boil for 2 minutes. Remove from heat and stir in 1½ cups cheddar cheese.
  4. Layer potatoes, onion, jalapeños, paprika, and cheese sauce in a cast iron skillet. Repeat layers until sauce is used.
  5. Place skillet in Pit Barrel® and cover with foil. Cook for 45 minutes.
  6. Remove foil, top with remaining cheddar cheese, and cook uncovered for 30 more minutes.
  7. Once cheese is golden and potatoes are tender, remove and serve.
