JALAPEÑO SCALLOPED POTATOES
These delicious scalloped potatoes are loaded with cheese and a kick of heat. They pair perfectly with your favorite cut of meat — especially Garlic Herb Prime Rib!

INGREDIENTS
- 3 large Russet potatoes, peeled and sliced
- 2 jalapeños, sliced
- 1/2 white onion, sliced
- 1 clove garlic, minced
- 2 cups milk
- 3 tbsp butter
- 3 tbsp flour
- 2½ cups cheddar cheese
- 1 tsp salt
- 1/2 tsp pepper
- 1/4 tsp paprika
DIRECTIONS
- Melt butter in a skillet and sauté garlic for 1 minute. Add flour and stir.
- Whisk in milk, then add salt, pepper, and paprika.
- Bring to a boil for 2 minutes. Remove from heat and stir in 1½ cups cheddar cheese.
- Layer potatoes, onion, jalapeños, paprika, and cheese sauce in a cast iron skillet. Repeat layers until sauce is used.
- Place skillet in Pit Barrel® and cover with foil. Cook for 45 minutes.
- Remove foil, top with remaining cheddar cheese, and cook uncovered for 30 more minutes.
- Once cheese is golden and potatoes are tender, remove and serve.
