HERB CRUSTED BEEF TENDERLOIN
Just in time for the Holidays, do something different this year and smoke a delicious Beef Tenderloin!

INGREDIENTS
- 1 whole beef tenderloin
- Black truffle oil
- Pit Barrel® Beef & Game Rub
- Killer Hogs Steak Rub
- Worcestershire sauce
HERB CRUSTED RUB
- 6 cloves minced garlic
- 1 tbsp chopped rosemary
- 1 tbsp chopped sage
- 1 tbsp chopped thyme
- 1/2 cup Killer Hogs Steak Rub
DIRECTIONS
- Remove from packaging and trim sinew or silver skin.
- Apply black truffle oil (or olive oil/Worcestershire) as binder.
- Season with Beef & Game Rub. Apply Herb Crusted Rub on top and pat to adhere.
- Light Pit Barrel® Cooker and add hickory wood chips if desired.
- Insert two hooks and hang tenderloin in cooker.
- After 1 hour, remove tenderloin.
- Drizzle Worcestershire sauce and return to cooker.
- Cook to 125°–130° internal temperature.
- Rest at least 30 minutes before slicing.
- Slice and serve.

- Combine all ingredients in a bowl and mix thoroughly.
