GRILLED HAWAIIAN CHICKEN DRUMS
These Hawaiian Chicken Drums are the perfect twist on a BBQ Classic!
INGREDIENTS
- 2–3 lbs chicken drumsticks
- 1 cup unsweetened pineapple juice
- 1/2 cup soy sauce
- 1/2 cup light brown sugar
- 1/4 cup chicken broth
- 1 inch ginger root, peeled and grated
- 2 garlic cloves, minced
- 1 tsp sriracha chili sauce
- Grilled pineapple wedges (optional)
DIRECTIONS
- Place chicken drumsticks in a large zip-lock freezer bag.
- In a bowl, mix pineapple juice, soy sauce, brown sugar, chicken broth, ginger, garlic and sriracha.
- Pour half of marinade into bag and refrigerate at least 2 hours. Reserve remaining marinade separately.
- Light Pit Barrel® Cooker.
- Remove drums from marinade and place on grill grate. Brush occasionally with reserved marinade.
- Cook 1.5–2 hours until internal temperature reaches 165°.
- Serve with scallions and grilled pineapple if desired.
