Grilled Hawaiian Chicken Drums

GRILLED HAWAIIAN CHICKEN DRUMS

These Hawaiian Chicken Drums are the perfect twist on a BBQ Classic!

INGREDIENTS

  • 2–3 lbs chicken drumsticks
  • 1 cup unsweetened pineapple juice
  • 1/2 cup soy sauce
  • 1/2 cup light brown sugar
  • 1/4 cup chicken broth
  • 1 inch ginger root, peeled and grated
  • 2 garlic cloves, minced
  • 1 tsp sriracha chili sauce
  • Grilled pineapple wedges (optional)

DIRECTIONS

  1. Place chicken drumsticks in a large zip-lock freezer bag.
  2. In a bowl, mix pineapple juice, soy sauce, brown sugar, chicken broth, ginger, garlic and sriracha.
  3. Pour half of marinade into bag and refrigerate at least 2 hours. Reserve remaining marinade separately.
  4. Light Pit Barrel® Cooker.
  5. Remove drums from marinade and place on grill grate. Brush occasionally with reserved marinade.
  6. Cook 1.5–2 hours until internal temperature reaches 165°.
  7. Serve with scallions and grilled pineapple if desired.
