GRILLED CHICKEN CAPRESE
This summery twist on chicken and vegetables is sure to make your taste buds do the happy dance.
INGREDIENTS
- 2–4 (6 oz) boneless skinless chicken breasts
- 1/2 cup balsamic vinaigrette
- 8 oz fresh mozzarella ball, sliced
- 1 ripe tomato
- 1/4 cup fresh basil
- 1/4 cup balsamic reduction
- All-Purpose Pit Barrel® Seasoning
DIRECTIONS
- Marinate the chicken in balsamic vinaigrette overnight.
- Season with Pit Barrel® All-Purpose Rub.
- Light your Pit Barrel® according to instructions.
- Place chicken on grill grate.
- At 140°F, add tomato and mozzarella on top. Let cheese melt.
- Remove chicken at 160°F internal temperature.
- Top with fresh basil and balsamic reduction before serving.
