BONELESS PORK LOIN
Pork loin is a great choice to cook when you have a crowd to feed. This recipe will feed the family in less than 1 hour with only 3 ingredients.

INGREDIENTS
- 1–6 (4–6 lb.) boneless pork loin roast(s)
- Olive oil
- Beef & Game Pit Rub
DIRECTIONS
- Light your Pit Barrel® according to the instructions.
- Remove roast(s), rinse gently with cold water, pat dry, and let rest until room temperature.
- Coat all sides lightly with olive oil, then season liberally with Beef & Game Pit Rub.
- Insert one hook into the center of the thicker end of each roast.
- Hang from the rods in the Pit Barrel®, leaving space between each, and secure the lid.
- Cook 35–45 minutes depending on size. Begin checking internal temp in the thickest part.
- Continue cooking until internal temperature reaches 145º.
- Remove roast(s), take out hooks, cover loosely with foil, and rest 10–15 minutes.
- Slice into individual serving-size portions.
