INGREDIENTS

  • 16 dates, pitted
  • 8 slices bacon, cut in half
  • Toothpicks
  • Goat cheese (optional, for stuffing)

DIRECTIONS

  1. Cut bacon slices in half.
  2. If using pre-pitted dates, gently open the slit where the pit was removed. If not pitted, make a small slit lengthwise and remove the pit.
  3. Stuff each date with goat cheese if desired.
  4. Wrap a half slice of bacon around each date and secure with a toothpick.
  5. Light your Pit Barrel® according to instructions.
  6. Place dates in the center of the Pit Barrel® in an oven-safe dish or cast iron skillet.
  7. Cook until bacon is golden and crispy, about 30–60 minutes depending on thickness.
  8. Remove, let cool slightly, and serve.
