INGREDIENTS

  • 1–8 slabs pork ribs (St. Louis or baby back/loin back)
  • Beef & Game Pit Rub
  • Barbecue sauce to taste (KC Masterpiece® Classic recommended)

DIRECTIONS

  1. Light your Pit Barrel® according to the instructions.
  2. Remove ribs, rinse gently with cold water, and pat dry.
  3. Trim skirt on bone side if present.
  4. Remove membrane by loosening with butter knife and pulling off with paper towel grip.
  5. Moderately coat both sides with Beef & Game Pit Rub.
  6. Insert one hook at least two bones down into the thicker end of each slab until secure.
  7. Hang ribs from rods in the Pit Barrel®, leaving space between slabs, and secure lid.
  8. Cook 3–4 hours (St. Louis style) or 2–3 hours (baby backs) until meat pulls back ¼–½ inch from bone. Tip: Check ribs each hour until familiar with cooking process.
  9. Remove slabs (leave hooks in), coat both sides with barbecue sauce.
  10. Hang back in Pit Barrel® and cook ~30 minutes until sauce caramelizes.
  11. Remove, confirm doneness, and cut into individual ribs.
