INGREDIENTS
- 1–8 slabs pork ribs (St. Louis or baby back/loin back)
- Beef & Game Pit Rub
- Barbecue sauce to taste (KC Masterpiece® Classic recommended)
DIRECTIONS
- Light your Pit Barrel® according to the instructions.
- Remove ribs, rinse gently with cold water, and pat dry.
- Trim skirt on bone side if present.
- Remove membrane by loosening with butter knife and pulling off with paper towel grip.
- Moderately coat both sides with Beef & Game Pit Rub.
- Insert one hook at least two bones down into the thicker end of each slab until secure.
- Hang ribs from rods in the Pit Barrel®, leaving space between slabs, and secure lid.
- Cook 3–4 hours (St. Louis style) or 2–3 hours (baby backs) until meat pulls back ¼–½ inch from bone. Tip: Check ribs each hour until familiar with cooking process.
- Remove slabs (leave hooks in), coat both sides with barbecue sauce.
- Hang back in Pit Barrel® and cook ~30 minutes until sauce caramelizes.
- Remove, confirm doneness, and cut into individual ribs.
