This flavorful mix of soy sauce, sesame oil, Chinese five-spice powder, garlic, and maple syrup will result in one of the best tasting ducks you'll ever taste.

INGREDIENTS

  • 5 lb whole duck
  • 1/4 cup soy sauce
  • 2 tbsp maple syrup
  • 1 tbsp toasted sesame oil
  • 1 tsp Chinese five-spice powder
  • 1 tbsp minced ginger
  • 2–3 garlic cloves, minced

DIRECTIONS

  1. Thaw duck and pat dry.
  2. Mix soy sauce, maple syrup, sesame oil, five-spice, garlic and ginger in a bowl.
  3. Place duck in large Ziploc bag and pour marinade over it.
  4. Refrigerate 24 hours, turning occasionally. Double-bag or place in bowl to prevent spills.
  5. Light Pit Barrel® according to instructions.
  6. Hang duck using Turkey Hanger and cook about 3 hours until internal temperature reaches 135° (or desired doneness).
  7. Let rest before slicing and serving.
